Summary
Cavit – short for Cantina Viticoltori del Trentino – is the largest wine producer in Trentino and one of the most striking examples of cooperative winemaking in Italy. The group, based in Ravina di Trento, is not an estate in the classic sense but a second-tier cooperative: eleven independent cooperative cellars and around 5,250 grower families deliver their grapes, while Cavit pools advice, vinification, bottling and distribution. Together the members farm roughly 6,350 hectares, more than 60% of Trentino's vineyard area. Internationally, Cavit is best known for approachable white wines from Pinot Grigio, Chardonnay and Müller-Thurgau, and for the bottle-fermented sparkling wine Trentodoc under the Altemasi brand.
History
The story begins in 1950, when growers in Trentino joined forces to market their wines together. Until then many families sold their grapes or wine individually and with little bargaining power. In 1957 the group started making its own wine, and in 1964 the central cellar was built in Ravina, south of Trento. A major expansion followed in 1977; today the site covers around 80,000 square metres.
Over the decades a regional association turned into an internationally oriented business. In the United States in particular, Cavit has been one of the best-known Italian wine brands since the 1980s – above all thanks to Pinot Grigio, which there stands almost as shorthand for fresh Italian white wine. In parallel the group built up its own sparkling range, Altemasi, becoming one of the defining houses of Trentodoc.
Location & Terroir
Trentino is shaped by the Alps: a narrow valley basin along the Adige (Etsch), framed by the Dolomites and the Brenta group. The Cavit members' vineyards are spread across five zones with very different conditions:
- Campo Rotaliano – the gravelly plain in the north, classic home of Teroldego
- Valle di Cembra – steep terraces on porphyry, up to around 850 metres, cool and high in acidity
- Valle dell'Adige – the broad main valley at roughly 190 to 650 metres
- Vallagarina – the warmer south towards Verona
- Valle dei Laghi and Alto Garda – sub-Mediterranean thanks to Lake Garda, with the steady valley wind known as the Ora
This range of altitudes, soils and climates is the group's real asset: cool high sites supply the acid-driven base wines for Trentodoc, warmer zones the foundation for reds.
Style & Philosophy
Cavit combines two things that rarely go together: very large volumes and reliable quality. That works because member growers receive intensive technical support. At its heart is PICA (Piattaforma Integrata Cartografica Agriviticola), which Cavit began developing in 2010 with the Fondazione Edmund Mach and the Fondazione Bruno Kessler. The platform maps soil, slope, aspect, altitude and climate data for every single plot and links them with live weather data. A team of agronomists turns this into recommendations on plant protection, irrigation and picking dates – precision viticulture on a very large scale, designed to reduce inputs in the vineyard at the same time.
Stylistically the whites stand for freshness, clear varietal aromatics and moderate alcohol; the reds are medium-bodied, juicy and alpine-cool rather than heavy. Trentodoc is all about finesse: long lees ageing, a fine bead and taut acidity.

As a cooperative, Cavit defines itself through ranges and brands rather than single vineyards:
- Altemasi – the Trentodoc line, with Riserva Graal as its flagship
- Bottega Vinai – varietal wines from selected zones of Trentino
- Mastri Vernacoli – the widely available entry range with Trentino classics
- Quattro Vicariati – a red Trentino Superiore DOC from Bordeaux varieties
- Maso Toresella – a historic 16th-century farmstead on Lake Toblino covering around 6.5 hectares, used as a representative seat and for a small premium range
Awards
For a house of this size, the density of awards is remarkable. The Altemasi Riserva Graal Trentodoc 2017 received the top ratings of the Italian wine guides, including Tre Bicchieri from Gambero Rosso in the 2025 edition and top marks in the AIS Vitae and Sparkle guides. The still wines also collect medals regularly at international competitions such as the Decanter World Wine Awards. Cavit thus shows that a cooperative structure and top quality are not mutually exclusive – and has done much to make wines from Trentino sought after worldwide.
