Weingut Hans Wirsching in Iphofen is one of the most important and tradition-rich addresses in Franconia. The family history reaches back to 1528; as a wine estate Wirsching has existed since 1630 – today in the 15th to 16th generation. On around 90 to over 100 hectares in the best Iphofen sites, it makes above all dry wines, with Silvaner as its undisputed leading variety. The Silvaner from the famous Julius-Echter-Berg is considered one of the benchmarks for the variety in Germany. The range is completed by fine Rieslings, an aromatic Scheurebe and Pinot Blanc – all in the clear, mineral and long-lived Wirsching style.
History
The Wirsching family's roots reach back to 1528, when an ancestor was already farming vineyards in Iphofen. As an independent wine estate the business has existed since 1630 – a span of almost 400 years during which the estate remained in family hands across many generations. The historic press house in Iphofen dates from the mid-16th century and still bears witness to this long tradition.
Over the centuries Wirsching grew into one of the flagships of Franconian viticulture. An important step was joining the VDP in 1983, which underlined the estate's focus on quality. Today the estate is run in the 15th to 16th generation: the owner is Dr. Heinrich Wirsching with his children, the business is led by his daughter Andrea Wirsching, and Dr. Klaus-Peter Heigel is responsible for the style in the cellar.
Location & Terroir
Iphofen lies at the edge of the Steigerwald in Lower Franconia, in one of the climatically favoured zones of Franconia. Two soil types give the wines their character: shell limestone (Muschelkalk), which yields taut, mineral and finely structured wines, and gypsum marl (Gipskeuper), which provides more powerful, spicy and fuller wines.
The continental climate with warm days and cool nights ensures a slow, even ripening and preserves the fresh acidity – ideal for Silvaner, which reflects origin and soil especially clearly. In the classified sites around Iphofen the estate can thus draw an unmistakable expression from every vineyard.
Style & Philosophy
The Wirsching style is understated, precise and origin-driven. Managing director Andrea Wirsching sums up the philosophy: to do everything to produce elegant dry wines from healthy grapes. The wines are predominantly vinified dry, clean and clear, emphasising minerality and structure rather than overt aromatics. Sustainability and careful work in the vineyard play a growing role.
At the centre is Silvaner, which Wirsching makes in many facets – from the fresh estate wine to the deep Grand Cru. Alongside are racy Rieslings, a typically Franconian, spicy-fruity Scheurebe and creamy Pinot Blanc. Many wines appear in the traditional Franconian bottle shape, the Bocksbeutel.

Wirsching is one of the consistently highly rated estates in Franconia and is regularly honoured in the leading German wine guides (Gault&Millau, Eichelmann, Falstaff). As a Silvaner specialist above all, the estate enjoys international standing and has done much to establish dry Franconian Silvaner as an independent force in the German wine world.
