History
The farm has been in the Stahl family's ownership since 1814. For generations it was a mixed agricultural holding; the concentration on pure viticulture began around 1984. The decisive turning point came in 2000, when Christian Stahl took over the estate.
Stahl consistently developed the winery and sharpened its profile: high-quality dry whites, its own wine shop and – as a trained chef – an ambitious restaurant that made the estate a destination for gourmets. Together with his wife Simone Stahl he today combines viticulture, gastronomy and marketing under a confident brand identity.
Location & Terroir
The estate lies in Auernhofen near Uffenheim, in the south-east of the Franconia (Franken) region close to the border with Baden-Württemberg. Decisive is the Muschelkalk (shell limestone): this calcareous, stony soil stores warmth, provides good drainage and gives the wines their clear, mineral structure and saltiness.
Franconia's continental climate, with warm days and cool nights, preserves the freshness and aromatics of the grapes. On these soils it is above all Silvaner that finds ideal conditions – translating the terroir particularly directly into clear, earthy-mineral wines.
Style & Philosophy
Stylistically Stahl stands for precision and dryness. The whites are clear, straight and mineral-driven – an expression the estate confidently markets under the slogan 'steel-hard' (stahlhart). Hand-picking, single-variety ageing and a focus on origin take priority.
The range is broad: at the top is Silvaner in several tiers, joined by Scheurebe, Riesling and Müller-Thurgau. It is rounded out by internationally styled wines from Sauvignon Blanc, Chardonnay and Chenin Blanc, which are unusual in Franconia and show the estate's experimental side.

The range is clearly tiered, from accessible estate wines to the ambitious top wines. Well-known among them are:

Awards
Winzerhof Stahl is regularly highly rated by the leading wine guides: at Falstaff the estate is listed with two forks and recently rose to around 90 points in the Wine Guide; individual whites such as the Chenin Blanc reached scores of about 94 points. Gault&Millau also lists the estate with an elevated rating. Christian Stahl was moreover named Young Winemaker of the Year early on, and the restaurant belonging to the estate received a Michelin star. Stahl thus combines top wine and top cuisine under one roof.
